Ang kaldereta ay isang kilalang ulam sa Pilipinas lalong-lalo na sa Luzon. Kadalasan ang karne nito ay kambing na sinamahan ng tomato paste at liver spread. Ang pinaka orihinal na sanggap nito ay ang karne ng kambing, tomato sauce, potato, bell pepper, spices, hot pepper, cheese, liver spread at olive.


Ang kaldereta ay nanggaling sa bansang espanyol ng sila ay manirahan dito sa Pilipinas at galing sa salitang "caldera" ibig sabihin cauldron ( Kaldero ). Paborito itong handaan ng mga pinoy gaya ng birthday, wedding, binyag, fiesta at iba pang okasyon. Sikat ito sa mga pinoy at hindi mawawala sa listahan ng paborito nilang ulam kagaya ko.


Marami ding pinoy ang gumagawa ng sarili nilang version. Kadalasan ngayon ang karne ng baka ang pinaka specialty ng mga pinoy pagdating sa kaldereta, nilalaga ito hanggang sa lumambot. May version din ng karne ng manok at baboy para makatipid. Para sa karne ng baka kailangan ng konting oras dahil sa pag-papalambot ng laman, para makatipid sa oras at mapabilis sa pag-luto payo ko po sa inyo na gumamit ng pressure cooker sa pag papalambot ng karne. Halos paborito din ito ng mga pinoy lalong-lalo na ang mga Filipino overseas worker, expatriates at mga pinoy na nasa ibat'ibang panig ng mundo.


MGA SANGKAP

  • 3 lbs. beef (chuck roast) cube
  • 1 medium-sized onion, sliced
  • 4 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1/4 cup banana ketchup
  • 2 large potatoes, cubed
  • 1/2 red bell pepper, cut into strips
  • 1/2 green bell pepper, cut into strips
  • 1/2 cup green olives
  • 1 cup garbanzos (chickpeas)
  • 1 small can liver paste (4oz.)
  • 1/4 cup creamy peanut butter
  • 2 Tbsp pickle relish
  • 2 pcs Thai chili, sliced and seeds removed (or more if you want it more spicy)
  • salt and pepper to taste
  • 3 Tbsp olive oil for sauteing

For marinade:

  • 1/2 cup pineapple juice
  • 3 cloves garlic, minced
  • 1 pc bay leaf
  • 1/4 cup soy sauce
  • 1/4 tsp black pepper
  • 1/2 tsp asin



PARAAN NG PAG-LULUTO


- In a bowl, pagsasamahin ang pineapple juice, garlic, bay leaf, soy sauce, salt at pepper. Marinate beef in mixture for at least one hour. Drain, saving the marinade.


- In a large pan over medium heat, gisahin ang sibuyas at garlic sa olive oil until onion is translucent.


- Add beef and saute until juice starts to come out. Cover and simmer for 10 minutes.


- Add saved marinade, tomato sauce, ketchup, liver spread, pickle relish and half of the bell pepper (I love the crisp of bell pepper while eating my kaldereta but I also want the beef to absorb the flavor of the bell pepper, so I divide it into two and cook the first half with the beef and add the other half when the beef is already cooked). Mix well. Reduce heat to medium low and simmer with occasional stirring for 30-45 minutes or until beef is almost tender.


- Add peanut butter, potatoes and the rest of the bell pepper. Simmer until potatoes are almost tender.


- Add garbanzos, green olives and Thai chili. Mix well. Season with salt and pepper to suit your taste. Simmer for another 5 minutes.


- Remove from heat. Serve with hot rice.

The foods below need to be cooked thoroughly before eating: Poultry (chicken, manok, including chicken liver), pork (including offals, intestines, liver) burgers, sausages

Familiarize yourself with basic cooking terms by reading cookbooks or watching cooking shows.

Follow the instructions in the recipe as closely as possible the first time. You can then modify it to your taste preference when you make it again.

Have everything ready before you start cooking, including having ingredients measured out.

Another important tip for a beginner cook is to clean as you work. When you leave your workspace a mess with leftover ingredients, trash, etc., you tend to forget what it is that you're working on
