Ang Kare-kare ay isang Filipino dish na gawa sa Peanut sauce, na may iba't-ibang gulay, Stewed Oxtail, Beef at minsan Tripe (tuwalya ng baka). Pwede din gamitin ang karne ng Kambing o rare Chicken. Laging kasama nito ang sawsawan na Bagoong (shrimp paste).


Hindi nawawala ang Kare-kare sa nakaugaliang "Fiesta" ng mga pinoy lalong lalo na sa Pampanga. Kadalasan sa mga Filipino-American dish version Oxtail lamang ang ginagamit nilang karne.


Maraming history ang Kare-kare, sinasabi nilang nanggaling ito sa lugar ng Pampanga kung saan tintawag itong sentro ng kulinaryo dito sa Pilipinas.


May mga nagsabi din na nanggaling ito sa mga Moro Elite na tumira sa Maynila bago pa dumating ang mga espanyol sa ating bansa.


Meron din nagsabi na ang Kare-kare ay galing sa salitang Indian word " Curry", na pinakilala nila ang dish na ito ng sila ay nanirahan sa probinsya ng Rizal.


Sinasabi din na ang Kare-kare ay galing sa Japanese word "Kare".


Naging paborito ito ng mga taga Sulu at Tawi-Tawi hanggang ngayon. Ito ang isa sa mga paborito ng mg Pinoy kahit na sila ay nasa abroad.


MGA SANGKAP

1 kl buntot ng baka


1/2 tuwalya ng baka


2 buo sibuyas (hiniwa-hiwa)


5 ulo bawang (pinitpit)


5 kutsara mantika


1 puso ng saging (2 1/2 inches hiwa)


2 bundle sitaw (2 inches haba)


2 bundle pechay (hiwain sa gitna)


4 katamtamang talong (2 inches haba)


2 kutsara atsuete ( ibabad sa 1/2 cup water)


1/2 cup bigas,tinusta at dinikdik ng pino


1/2 tasa peanut butter


1 cup bagoong (shrimp paste)


betsin ( to taste)


asin (to taste)


paminta (to taste)



PARAAN NG PAG-LULUTO

NOTE: Oras ng pagpapalambot ng baka


1 hour yields harder meat

1 1/2 hours fairley tender meat

2 hours incredibly tender meat




1. Pakuluan ang buntot at tuwalya ng baka sa katamtamang dami ng tubig hanggang sa lumambot. Hanguin ang tubig at itapon ang sabaw.


2. Linising mabuti ang buntot, kaskasin ang lahat ng balahibo sa balat.


3. Pakuluan muli sa katamtamang dami ng tubig sa loob ng 15 minuto, lagyan ng konting asin, paminta at isa buo sibuyas (sliced).Hanguin ang karne at hiwain ng 3 inches.

ITABI ANG SABAW


4. Prituhin ng bahagya sa mantika ang buntot. (Set aside)


5. Gisahin ang sibuyas at bawang sa mantika, idagdag ang sabaw ng baka at katas ng atsuete.


6. Ilagay ang puso ng saging at sitaw hanggang sa lumambot.


7. Ilagay ang peanut butter at tinustang bigas, haluin mabuti para hindi dumikit.


8. Pagkaraan ng 3 minuto idagdag ang talong, pechay, buntot at tuwalya ng baka.


9. Timplahin ng asin, betsin at paminta ayon sa panlasa.


10. Hinaan sa katamtamang apoy sa loob ng 3 minuto at halu-haluin.


11. Ihain habang mainit kasama ng bagoong (shrimp paste).

The foods below need to be cooked thoroughly before eating: Poultry (chicken, manok, including chicken liver), pork (including offals, intestines, liver) burgers, sausages

Familiarize yourself with basic cooking terms by reading cookbooks or watching cooking shows.

Follow the instructions in the recipe as closely as possible the first time. You can then modify it to your taste preference when you make it again.

Have everything ready before you start cooking, including having ingredients measured out.

Another important tip for a beginner cook is to clean as you work. When you leave your workspace a mess with leftover ingredients, trash, etc., you tend to forget what it is that you're working on
