Napakaraming klase ng recipe ng inihaw na baboy ang mayroon sa buong mundo. Ngunit iba at may sariling pagkakakilanlan ang inihaw na baboy ng Pilipinas. Hindi ito nawawala sa mga handaan lalo na tuwing may kaarawan. Karaniwan itong hiniwa hiwang maliliit na laman ng baboy na nakatuhog sa maninipis na kawayan o BBQ sitck. Ang dulong bahagi nito ay karaniwang taba ng baboy. Isa pang katangian ng Filipino BBQ ay ang matamis nitong lasa na talaga namang dahilan kung bakit paborito ito ng maraming bata, pati na rin ng mga matatanda.


1 kilo ng pork belly (liempo, tyan ng baboy)

20 pirasong BBQ stick

1 cup ng toyo

4 kutsara ng liquid seasoning

1 buo o head ng bawang, tadtarin ng pino

1 pirasong sibuyas, tadtarin ng pino

¼ cup ng kalamansi juice

½ cup Sprite o 7up

1 kutsarita ng pamintang durog

3 kutsara ng pulang asukal

½ cup ng sweet tomato catsup


1. Hiwain ang baboy ng maninipis at pahaba o mga dalawang pulgada pahaba.

2. Sa isang bowl,i-marinate o ibabad ang karne ng baboy, toyo, bawang, sibuyas, kalamansi juice, pamintang durog, asukal, tomato catsup, at Sprite o 7up.

3. Iwanan ito sa loob ng tatlong oras at baligtarin at iwanan muli ng isa pang tatlong oras.

4. Ibabad ang BBQ sticks sa tubig upang matanggal ang mga nakausling bahagi nito at iwasang masunog at karne habang iniihaw.

5. Kapag natapos na ang pagbababad, tuhugin ng maayos ang karne sa bawat BBQ stick.

6. Ihanda ang pag-iihawan. Ilagay lamang ang karne kapag mainit na mainit na ang ihawan. Gamitin ang pinagbabaran ng karne bilang pamahid sa ini-ihaw upang hindi maging tuyot ang karne.

7. Baligtarin ang bawat gilid nito upang maluto ng mabuti. Ihain.


Tip/s:

1. Sprite o 7up – maaari ring gumamit ng Coke, kung gustong maging mas brown ang kakalabasan ng BBQ.

2. Sweet tomato catsup – maaari ring gumamit ng banana catsup upang magbigay ng mas “Pinoy” na lasa sa inihaw ng BBQ.

3. Pinagbabaran ng karne – Upang maiwasan ang “food poisoning” sapagkat hilaw na karne ang ibinibad dito, kumuha muna ang ng isang maliit na kaserola at pakuluan sa mahinang apoy ang pinagbabaran ng karne.
